Tapas are small Spanish appetizer plates meant to be shared with family and friends. But these are not just any small plates, they are Spanish Tapas. Spain is known for its tapas culture, where small plates of food are shared among friends and family. This encourages socializing and allows friends & family to sample a variety of dishes in one sitting.

Chef Carlos discovered his passion for Spanish food and Spain's diverse cultural regions as a child. Tapas are inspired by the traditional Spanish dishes of Chef Carlos's childhood and elevated through his experiences as a renowned chef in Spain and America.

Chef Carlos’s passion and diverse Tapa skills were inherited from from his father. Chef Carlos’s father was a celebrity chef on a Mediterranean cruise ship and was well-respected for mastering different cuisines. His Spanish food and tapas were celebrated in his Village, and people planned weddings around when his father would come home!

According to Chef Carlos, ``The tradition of tapas is said to have originated from the practice of covering drinks with a small plate or ``tapa`` to keep flies away. Over time, these covers evolved into small dishes of food served alongside drinks at tapas bars.
